DICKERSNOODLE COOKIES (recipe originally from my Mom)
These are a variation on the classic "Snickerdoodle Cookies".
INGREDIENTS:
1) 1 Cup butter
2) 2 eggs, beaten
3) 1 1/2 Cups White Sugar
4) 2 3/4 Cups sifted all-purpose white flour
5) 2 teasoons Cream of Tartar
6) 1 scant teaspoon baking soda
7) 1/2 teasoon salt
8) 3/4 Cup coconut
9) 3/4 Cup chopped Hazelnuts (aka Filberts)
10) 2 Tablespoons sugar.
11) 2 teaspoons Cinnamon
INSTRUCTIONS:
1) Combine butter, sugar, and eggs.
2) Sift flour, Cream of Tartar, baking soda, and salt into first mixture.
3) Blend well.
4) Add in coconut and nuts and blend.
5) Shape dough into balls the size of walnuts.
6) Combine the cinnamon and sugar in a small bowl.
7) Roll doughballs in the cinnamon and sugar mixture.
8) Bake on greased cookie sheet at 350 degrees for about 10 minutes.
